“Kobe Beef” is a term that has become generic but is not always reliable. It is only authentic when it comes with the official certificate and license from the Kobe Beef Promotion and Marketing Association.
To carry this label, the cattle must be born, raised, and slaughtered in Hyōgo Prefecture, and achieve at least an A4 grade. Only 22 restaurants in France and 7 in Spain are certified. Among them are the three Akaneya restaurants.
