It all began with Carlota Akaneya in August 2011. Chefs, artists, and lovers of Japanese culture gathered in this iconic and captivating corner of Barcelona’s Raval neighborhood. In 2016, Ferran Adrià chose it to surprise his wife on her 50th birthday, and Tripadvisor included it among the top ten restaurants in Spain, awarding it the “Best of the Best” prize from the Travelers’ Choice Awards.
Since 2020, it has been the first and only restaurant in Barcelona to serve authentic Kobe Beef and Crown Melon, the most expensive melon in the world. In 2022, it became the second restaurant outside Japan to offer Matsusaka Beef from its most exclusive farm: Ito Ranch.
The aesthetics of Kyoto’s most alternative side come to Pintor Fortuny 32 in Barcelona. Its architecture, featuring lamps from the ryokan Tawaraya and eight custom-made barbecue tables, rises over the same terrazzo floor as the tavern that preceded it, Ivanhoe. Fire, jazz, and omotenashi blend into an intimate atmosphere that makes you lose track of time and space. Born in 1994 in San Cristóbal, Venezuela, Juan José Pernía grew up surrounded by sacks of flour, ovens, and the aroma of freshly baked bread in his grandparents’ bakery. He got his first job at Capri pizzeria, run by his uncles, where he discovered that the most rewarding part was customer satisfaction. Since then, the pursuit of excellence became natural and non-negotiable.
At 18, he crossed the Atlantic to train in Dublin, where he worked in all stations at the Green Hen restaurant under chefs Sweetie and Ritz. Everything changed at 23, when he enrolled at the Aranda school in Madrid and worked in Dabiz Muñoz’s restaurants. Alongside chefs Balo Ortiz at StreetXo and Antonio Villodre at GoXo, he refined his sensitivity to detail and product.
Then, he became fascinated by a new Japanese restaurant in Madrid: Pilar Akaneya. Charcoal on the table and cuts of Japanese meat that surpassed everything he had tried. He contacted chef Pepe Fernández and expressed his desire to join the restaurant. Pilar Akaneya “changed my way of understanding hospitality.” When Chiho Murata saw he was ready to take the leap, she offered him the helm of Carlota Akaneya in Barcelona.
